Put the tater tots in a dish and make sure they are all in one layer.
Bake for 20-25 minutes, or until crispy and golden brown, as directed on the box.
Cook Sausage:
While the tater tots are baking, cook the sausage in a skillet over medium heat until crispy.
Transfer the cooked sausage to a plate that has absorption on it so that it can absorb the fat. Once cooled, chop or crumble into pieces.
Prepare Eggs:
In the same skillet used for sausage or mortadella (if desired, for added flavor), scramble the eggs over medium heat until cooked through but still moist. Season with salt and pepper to taste.
Assemble the Breakfast Bowls:
Divide the crispy tater tots into four serving dishes.
Top each bowl with scrambled eggs, shredded cheddar cheese, diced bell peppers, green onions, and the cooked sausage pieces.
Serve:
If desired, garnish with more green onions or cheese.
