- 8 oz Smoked salmon, sliced
- 2 Ripe avocados, diced
- 4 cups Mixed greens (arugula, spinach, or romaine)
- 1/2 Red onion, thinly sliced
- 1 cup Cherry tomatoes, halved
- 1 Cucumber, sliced
- 1/4 cup Capers (optional)
- 2 tbsp Fresh dill, chopped
- 2 tbsp Extra virgin olive oil
- 1 tbsp Lemon juice
- Salt and pepper
In a large bowl, combine mixed greens, sliced red onion, cherry tomatoes, cucumber, and diced avocados.
Gently toss the ingredients together.
Top the salad with the smoked salmon.
Drizzle with olive oil and lemon juice.
Sprinkle with capers, fresh dill, salt, and pepper to taste.
Serve immediately.
