Ingredients
  

  • 8 oz Smoked salmon, sliced
  • 2 Ripe avocados, diced
  • 4 cups Mixed greens (arugula, spinach, or romaine)
  • 1/2 Red onion, thinly sliced
  • 1 cup Cherry tomatoes, halved
  • 1 Cucumber, sliced
  • 1/4 cup Capers (optional)
  • 2 tbsp Fresh dill, chopped
  • 2 tbsp Extra virgin olive oil
  • 1 tbsp Lemon juice
  • Salt and pepper

Instructions
 

  • In a large bowl, combine mixed greens, sliced red onion, cherry tomatoes, cucumber, and diced avocados.
  • Gently toss the ingredients together.
  • Top the salad with the smoked salmon.
  • Drizzle with olive oil and lemon juice.
  • Sprinkle with capers, fresh dill, salt, and pepper to taste.
  • Serve immediately.
