Ingredients
  

  • 6 Large eggs
  • 1 tbsp Dijon mustard
  • 1/2 tbsp Smoked paprika
  • 1/4 tbsp Salt
  • 1/4 tbsp Black pepper
  • 1 tbsp Apple cider vinegar
  • Chives for garnish

Instructions
 

  • Preheat your smoker to 225°F (110°C).
  • The eggs should be smoked for approximately fifteen minutes, or until the shells have a faint smoky hue.
  • Remove the eggs and allow them to cool in an ice bath for 5 minutes.
  • After removing the peel, cut the eggs in half lengthwise. Remove the yolks with care and place in a bowl.
  • Mash the yolks with a fork and mix in mayonnaise, Dijon mustard, smoked paprika, salt, pepper, and apple cider vinegar until smooth.
  • Fill the egg white halves with the yolk mixture, either with a spoon or a piping bag.
  • Garnish with a sprinkle of smoked paprika and chopped chives if desired.
  • Serve immediately or chill until ready to serve.
