Ingredients
  

For the Peanut Butter Cookie Dough:

  • 1/4 cup unsalted butter, softened
  • 1/3 cup creamy peanut butter
  • 1/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 large egg (beat one egg and use half)
  • 1/2 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt

For the Brownie Cookie Dough:

  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 large egg (beat one egg and use half)
  • 1/2 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon salt

Instructions
 

Prepare the Peanut Butter Cookie Dough:

  • In a large mixing bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
  • Add the beaten half egg and vanilla extract; mix until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
  • Cover the dough and refrigerate for 30 minutes.

Prepare the Brownie Cookie Dough:

  • In another mixing bowl, combine the melted butter and granulated sugar; whisk until smooth.
  • Add the beaten half egg and vanilla extract; mix thoroughly.
  • Sift together the cocoa powder, flour, baking powder, and salt.
  • Gradually incorporate the dry ingredients into the wet mixture, stirring until a smooth dough forms.
  • Cover the dough and refrigerate for 30 minutes.

Assemble the Swirl Cookies:

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Take approximately 1 tablespoon of peanut butter dough and 1 tablespoon of brownie dough. Gently press them together and roll into a ball.
  • Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  • Using a toothpick or skewer, gently swirl the two doughs together to create a marbled effect. Avoid overmixing to maintain distinct swirls.

Bake:

  • Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers are slightly soft.
  • Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
