New Orleans Shrimp and Corn Bisque

- 1 pound Shrimp, peeled and deveined
- 2 cups Corn kernels, fresh or frozen
- 2 tbsp Olive oil
- 1 Onion, chopped
- 2 Cloves garlic, minced
- 1 Red bell pepper, chopped
- 2 cups Chicken broth
- 1 cup Heavy cream
- 1 tbsp Cajun seasoning
- Salt and pepper
- 2 tbsp Butter
- 2 tbsp All-purpose flour
- 2 Green onions, sliced
Heat olive oil in a large pot over medium heat. Add the onion, garlic, and red bell pepper and sauté until tender.
Add the corn and simmer for another 2-3 minutes.
Add the shrimp and simmer for 3-4 minutes, or until pink.
Remove shrimp and set aside. Add butter and flour to the pot, stirring to create a roux.
Bring to a boil, whisking in the chicken broth slowly.
Stir in heavy cream and Cajun seasoning. Add salt and pepper to taste.
Return shrimp to the pot and heat through. Garnish with sliced green onions.
