Mini Meatball Pizzas are the perfect comfort food snack or appetizer. These pizzas are quick to prepare, featuring soft biscuit bases topped with marinara sauce, melty cheese, and juicy meatballs. Ideal for game days, family nights, or parties, they are a crowd-pleasing finger food that kids and adults alike will enjoy.

Ingredients
  

  • 1 package (12 oz) refrigerated Italian-style meatballs (pre-cooked)
  • 1 can (16 oz) refrigerated jumbo biscuits (8 biscuits)
  • 1 cup pizza sauce (store-bought or homemade)
  • 1 ½ cups shredded pizza blend cheese (e.g., mozzarella, provolone mix)

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Prepare the meatballs: Cut each meatball in half and set aside.
  • Prepare the biscuit bases: Open the biscuit can and pull each biscuit apart into 2 discs, creating 16 discs total. Flatten each disc slightly with your palms.

Assemble the pizzas:

  • Place the flattened biscuits on 2 ungreased baking sheets.
  • Spread 1 tablespoon of pizza sauce over each biscuit disc.
  • Sprinkle about 1 ½ tablespoons of shredded cheese on each.
  • Top with 2 meatball halves, cut side down.
  • Bake in the preheated oven for 15 minutes or until the cheese is melted, slightly browned, and the meatballs reach an internal temperature of 160°F.
  • Serve warm and enjoy! Refrigerate any leftovers for up to 3 days.
