- 1 cup Graham cracker crumbs
- 1/4 cup Sugar
- 1/4 cup Melted butter
- 16 oz Cream cheese, softened
- 1 cup Sugar
- 2 Large eggs
- 1/4 cup Lemon juice
- 1 tbsp Lemon zest
- 1 tsp Vanilla extract
Preheat oven to 350°F (175°C).
Mix graham cracker crumbs, sugar, and melted butter. Press onto the bottom of a baking pan that is 9 by 9 inches.
Cream cheese and sugar should be beaten until smooth in a large bowl.
Add the eggs one at a time, fully mixing after each addition.
Add the vanilla essence, lemon juice, and lemon zest and stir.
Pour the cream cheese mixture over the crust.
Bake for 30 minutes or until set. Let cool to room temperature.
Before cutting into bars, let it sit in the refrigerator for at least two hours.
