Ingredients
  

  • 1 cup Graham cracker crumbs
  • 1/4 cup Sugar
  • 1/4 cup Melted butter
  • 16 oz Cream cheese, softened
  • 1 cup Sugar
  • 2 Large eggs
  • 1/4 cup Lemon juice
  • 1 tbsp Lemon zest
  • 1 tsp Vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Mix graham cracker crumbs, sugar, and melted butter. Press onto the bottom of a baking pan that is 9 by 9 inches.
  • Cream cheese and sugar should be beaten until smooth in a large bowl.
  • Add the eggs one at a time, fully mixing after each addition.
  • Add the vanilla essence, lemon juice, and lemon zest and stir.
  • Pour the cream cheese mixture over the crust.
  • Bake for 30 minutes or until set. Let cool to room temperature.
  • Before cutting into bars, let it sit in the refrigerator for at least two hours.
