For the Chicken:
- 3 large chicken breasts, halved to make 6 fillets.
- 2 large eggs.
- 1 tablespoon minced garlic.
- 2 tablespoons fresh parsley, chopped.
- 1 cup Panko breadcrumbs.
- ½ cup Italian-style breadcrumbs.
- ½ cup grated Parmesan cheese.
- ½ teaspoon each of garlic powder and onion powder.
- ½ cup olive oil (for frying).
- Salt and pepper to taste.
For the Sauce:
- 1 tablespoon olive oil.
- 1 large onion, chopped.
- 2 teaspoons minced garlic.
- 14 oz tomato puree (passata).
- ¼ teaspoon salt and black pepper (each).
- 1 teaspoon dried Italian herbs.
- Optional: 1 teaspoon sugar.
For the Topping:
- 8 oz mozzarella cheese, sliced or shredded.
- ⅓ cup Parmesan cheese, freshly grated.
- 2 tablespoons fresh basil or parsley, chopped
Prepare the Chicken:
Whisk eggs, garlic, parsley, salt, and pepper in a shallow dish.
Add chicken to coat evenly. Marinate for at least 15 minutes or up to overnight.
Mix breadcrumbs, Parmesan, garlic powder, and onion powder in another dish.
Coat the chicken in the breadcrumb mixture.
Cook the Chicken:
Heat olive oil in a skillet over medium-high heat.
Fry the chicken for 4–5 minutes per side until golden and crispy.
Transfer the chicken to a baking tray.
Prepare the Sauce:
Heat olive oil in a pot, sauté onion until soft, then add garlic until fragrant.
Stir in tomato puree, Italian herbs, salt, and pepper. Simmer for 8 minutes until thickened.
Assemble and Bake:
Preheat oven to 430°F (220°C).
Spoon sauce over each chicken fillet, top with mozzarella and Parmesan.
Bake for 15–20 minutes until cheese is bubbly and chicken is cooked through.
