- 12 oz Pasta (fettuccine or linguine)
- 1 tbsp Olive oil
- 1 Small onion, finely chopped
- 2 Cloves garlic, minced
- 1 cup Heavy cream
- 1/2 cup Grated Parmesan cheese
- 6 oz Smoked salmon, sliced
- 1/4 cup Fresh dill, chopped
- Juice of 1/2 lemon
- Salt and pepper
Pasta should be cooked until al dente, following the package's instructions. Drain and set aside.
In a big skillet over medium heat, heat the olive oil. Add the chopped onion and cook for 3 to 4 minutes, or until translucent.
Add the minced garlic and sauté for a further minute.
Add the heavy cream and stir several times until it begins to simmer. When the Parmesan cheese melts and the sauce thickens, add it and stir.
Add the smoked salmon, lemon juice, and fresh dill to the skillet, mixing until well incorporated. Cook for 1-2 minutes.
Mix the sauce into the cooked pasta until it coats it evenly. Season with salt and pepper to taste.
Serve immediately with extra grated Parmesan cheese and a sprinkle of dill if desired.
