Ingredients

  • 12 oz Pasta (fettuccine or linguine)
  • 1 tbsp Olive oil
  • 1 Small onion, finely chopped
  • 2 Cloves garlic, minced
  • 1 cup Heavy cream
  • 1/2 cup Grated Parmesan cheese
  • 6 oz Smoked salmon, sliced
  • 1/4 cup Fresh dill, chopped
  • Juice of 1/2 lemon
  • Salt and pepper

Instructions

  • Pasta should be cooked until al dente, following the package's instructions. Drain and set aside.
  • In a big skillet over medium heat, heat the olive oil. Add the chopped onion and cook for 3 to 4 minutes, or until translucent.
  • Add the minced garlic and sauté for a further minute.
  • Add the heavy cream and stir several times until it begins to simmer. When the Parmesan cheese melts and the sauce thickens, add it and stir.
  • Add the smoked salmon, lemon juice, and fresh dill to the skillet, mixing until well incorporated. Cook for 1-2 minutes.
  • Mix the sauce into the cooked pasta until it coats it evenly. Season with salt and pepper to taste.
  • Serve immediately with extra grated Parmesan cheese and a sprinkle of dill if desired.
