- 2 large boneless, skinless chicken breasts (about 1.5 to 1.7 pounds)
- Salt and freshly ground black pepper, to taste
- 3 tablespoons all-purpose flour (for dredging; can use gluten-free flour if preferred)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes in oil, drained and chopped
- 1 tablespoon tomato paste
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 1/2 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- Fresh basil leaves, chopped (for garnish)
Prepare the Chicken:
Slice each chicken breast horizontally to create two thinner cutlets, resulting in four pieces.
Season both sides of the chicken cutlets with salt and freshly ground black pepper.
Dredge the chicken in flour, shaking off any excess.
Sear the Chicken:
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
Add the chicken cutlets to the skillet and sear for about 5 minutes on each side, or until golden brown and cooked through.
Transfer the cooked chicken to a plate and set aside.
Prepare the Sauce:
In the same skillet, reduce heat to medium.
Add the minced garlic and sauté for about 30 seconds until fragrant.
Stir in the chopped sun-dried tomatoes, tomato paste, and red pepper flakes. Cook for an additional 1-2 minutes.
Pour in the chicken broth, stirring to deglaze the pan and incorporate any browned bits from the bottom.
Add the heavy cream and bring the mixture to a simmer.
Stir in the grated Parmesan cheese until the sauce is smooth and slightly thickened.
Season the sauce with additional salt and pepper to taste.
Combine and Serve:
Return the seared chicken cutlets to the skillet, spooning the creamy sauce over the top.
Allow the chicken to simmer in the sauce for 2-3 minutes to absorb the flavors.
Garnish with chopped fresh basil leaves before serving.
