Ingredients
  

  • 2 large boneless, skinless chicken breasts (about 1.5 to 1.7 pounds)
  • Salt and freshly ground black pepper, to taste
  • 3 tablespoons all-purpose flour (for dredging; can use gluten-free flour if preferred)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 1 tablespoon tomato paste
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh basil leaves, chopped (for garnish)

Instructions
 

Prepare the Chicken:

  • Slice each chicken breast horizontally to create two thinner cutlets, resulting in four pieces.
  • Season both sides of the chicken cutlets with salt and freshly ground black pepper.
  • Dredge the chicken in flour, shaking off any excess.

Sear the Chicken:

  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Add the chicken cutlets to the skillet and sear for about 5 minutes on each side, or until golden brown and cooked through.
  • Transfer the cooked chicken to a plate and set aside.

Prepare the Sauce:

  • In the same skillet, reduce heat to medium.
  • Add the minced garlic and sauté for about 30 seconds until fragrant.
  • Stir in the chopped sun-dried tomatoes, tomato paste, and red pepper flakes. Cook for an additional 1-2 minutes.
  • Pour in the chicken broth, stirring to deglaze the pan and incorporate any browned bits from the bottom.
  • Add the heavy cream and bring the mixture to a simmer.
  • Stir in the grated Parmesan cheese until the sauce is smooth and slightly thickened.
  • Season the sauce with additional salt and pepper to taste.

Combine and Serve:

  • Return the seared chicken cutlets to the skillet, spooning the creamy sauce over the top.
  • Allow the chicken to simmer in the sauce for 2-3 minutes to absorb the flavors.
  • Garnish with chopped fresh basil leaves before serving.
