Crab Brulee

Ingredients
  

  • 1 cup Heavy cream
  • 4 Egg yolks
  • 1/4 cup Grated Parmesan cheese
  • 1/2 pound Fresh crab meat
  • 1 tbsp Chopped chives
  • Salt and pepper
  • 2 tbsp Sugar

Instructions
 

  • Preheat oven to 325°F (160°C).
  • In a bowl, whisk together cream, egg yolks, Parmesan, salt, and pepper.
  • Gently fold in crab meat and chives.
  • Divide mixture into ramekins.
  • Place ramekins in a baking dish and fill with hot water halfway up the sides.
  • Custards should set after 30 minutes in the oven.
  • Cool slightly, then sprinkle sugar on top and caramelize with a torch.
