- 8 oz semi-sweet chocolate (high-quality, finely chopped, e.g., Baker’s or Ghirardelli)
- 2/3 cup heavy cream
- 1/2 teaspoon vanilla extract
- Optional toppings: cocoa powder, crushed nuts, sprinkles, etc.
Melt Chocolate: Place chopped chocolate in a heatproof bowl.
Heat Cream: Warm heavy cream in a saucepan over medium heat until simmering (2-3 minutes). Pour over the chocolate and let it sit for 3-5 minutes.
Mix: Add vanilla extract, then stir until smooth. Cover with plastic wrap (directly touching the mixture to prevent condensation) and refrigerate for 1 hour or until firm.
Shape Truffles: Scoop tablespoon-sized portions, roll them into balls, and coat in desired toppings.
Chill: Place truffles on a parchment-lined sheet and chill until firm.
Storage
- Store truffles in an airtight container in the refrigerator for up to 2 weeks. Allow to come to room temperature (~20 minutes) before serving.
- Freeze for up to 3 months if needed.
