Ingredients

  • 150g unsalted butter, melted
  • ¾ cup brown sugar
  • Zest of 1 orange
  • 100ml fresh orange juice (from 2 medium oranges)
  • 2 eggs, whisked
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¾ cup dark or semi-sweet chocolate chips
  • 1 tbsp icing sugar (for dusting, optional)

Optional for toppings:

  • Segments of Terry’s Chocolate Orange or extra chocolate chips
  • Grated orange zest for garnish

Instructions

  • Preheat oven to 170°C (fan bake) / 340°F. Line a square or rectangular tin (approx. 8x12 inches).
  • Melt the butter in short microwave bursts or on the stovetop.
  • Combine wet ingredients: In a large bowl, mix the melted butter, sugar, orange zest, and orange juice. Stir in the whisked eggs.
  • Mix dry ingredients: Sift in the flour and baking powder. Stir until smooth and lumps are gone.
  • Add chocolate chips: Fold in half the chocolate chips.
  • Pour and top: Pour the batter into the prepared tin, smoothing evenly. Scatter the remaining chocolate chips (or Terry’s Chocolate Orange segments) on top.
  • Bake for 22-25 minutes or until the edges are golden and the center is just set (it should feel firm to the touch but soft inside).
  • Cool completely: Allow the blondies to cool in the tin. For clean slices, chill in the fridge for 6 hours or overnight.
  • Finish and serve: Dust with icing sugar and garnish with extra orange zest if desired.
