- 150g unsalted butter, melted
- ¾ cup brown sugar
- Zest of 1 orange
- 100ml fresh orange juice (from 2 medium oranges)
- 2 eggs, whisked
- 1 cup all-purpose flour
- 1 tsp baking powder
- ¾ cup dark or semi-sweet chocolate chips
- 1 tbsp icing sugar (for dusting, optional)
Optional for toppings:
- Segments of Terry’s Chocolate Orange or extra chocolate chips
- Grated orange zest for garnish
Preheat oven to 170°C (fan bake) / 340°F. Line a square or rectangular tin (approx. 8x12 inches).
Melt the butter in short microwave bursts or on the stovetop.
Combine wet ingredients: In a large bowl, mix the melted butter, sugar, orange zest, and orange juice. Stir in the whisked eggs.
Mix dry ingredients: Sift in the flour and baking powder. Stir until smooth and lumps are gone.
Add chocolate chips: Fold in half the chocolate chips.
Pour and top: Pour the batter into the prepared tin, smoothing evenly. Scatter the remaining chocolate chips (or Terry’s Chocolate Orange segments) on top.
Bake for 22-25 minutes or until the edges are golden and the center is just set (it should feel firm to the touch but soft inside).
Cool completely: Allow the blondies to cool in the tin. For clean slices, chill in the fridge for 6 hours or overnight.
Finish and serve: Dust with icing sugar and garnish with extra orange zest if desired.
