Ingredients
  

  • 1 cup (120g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (43g) unsweetened cocoa powder
  • 3/4 cup (170g) unsalted butter
  • 2 tablespoons (28ml) vegetable oil (or canola/coconut oil)
  • 1 and 1/3 cups (265g) granulated sugar
  • 2 large eggs
  • 1 large egg yolk
  • 3/4 cup (128g) chocolate chips
  • 1 teaspoon espresso powder (optional, enhances chocolate flavor)

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper and lightly spray it with non-stick baking spray.
  • Mix dry ingredients: In a large bowl, sift together the flour, baking powder, salt, cocoa powder, and espresso powder. Set aside.
  • Melt butter and sugar: In a medium saucepan, combine the butter, oil, and 1/3 cup of sugar. Heat over medium heat, stirring frequently until the butter is completely melted. Remove from heat.
  • Combine eggs and sugar: In a large mixing bowl, whisk together the eggs and the remaining sugar until well combined and slightly thickened (about 30 seconds).
  • Add butter mixture: Gradually pour the warm butter mixture into the egg mixture while whisking constantly to avoid cooking the eggs.
  • Combine wet and dry ingredients: Add the dry ingredients and chocolate chips to the wet mixture. Gently fold with a rubber spatula until just combined. Do not overmix.
  • Bake: Pour the batter into the prepared baking pan, spreading it evenly. Bake for 25–30 minutes. The brownies are done when the edges are set, and a toothpick inserted in the center comes out with a few moist crumbs.
  • Cool: Allow the brownies to cool in the pan for at least 15 minutes. For best results, chill them for 1–2 hours to achieve a fudgier texture.
  • Slice and serve: Cut into squares and enjoy!
