Ingredients
  

  • 3 boneless, skinless chicken breasts
  • 1 ½ cups chicken stock (low sodium preferred)
  • 3 tablespoons unsalted butter
  • 1 tablespoon oil (e.g., olive or canola)
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs or thyme
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Optional: fresh parsley for garnish

Instructions
 

Prepare the Chicken:

  • Season chicken breasts with salt and pepper.

Sear the Chicken:

  • Heat oil and half the butter in a skillet over medium heat. Sear chicken on both sides until golden brown (about 5 minutes per side). Remove and set aside.

Make the Gravy:

  • Add the remaining butter to the pan. Whisk in the flour to make a smooth paste when it has melted. Gradually pour in chicken stock, whisking continuously to avoid lumps. Add garlic powder and herbs.

Simmer:

  • Return the chicken to the skillet, cover, and simmer for 10-15 minutes, flipping occasionally, until the chicken is fully cooked (internal temperature: 165°F).

Serve:

  • Garnish with parsley and serve with mashed potatoes or vegetables.
