- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 can (15 oz) black beans, rinsed and drained
- 1/2 cup salsa (store-bought or homemade)
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (divided into 1/2 cup for filling, 1/2 cup for topping)
- 4 large flour tortillas (burrito-sized)
- Optional toppings: chopped tomatoes, lettuce, guacamole, sour cream, jalapeños, or extra salsa
Cook the Beef Mixture:
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
