Ingredients
  

  • 1 lb lean ground beef
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 can (15 oz) black beans, rinsed and drained
  • 1/2 cup salsa (store-bought or homemade)
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (divided into 1/2 cup for filling, 1/2 cup for topping)
  • 4 large flour tortillas (burrito-sized)
  • Optional toppings: chopped tomatoes, lettuce, guacamole, sour cream, jalapeños, or extra salsa

Instructions
 

Cook the Beef Mixture:

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds.
  • Add the ground beef to the skillet, breaking it apart with a spoon. Season with chili powder, cumin, paprika, salt, and pepper. Cook for 5-7 minutes or until the beef is browned. Drain any excess fat.

Add Beans and Salsa:

  • Stir in the black beans and salsa. Let the mixture simmer for 3-5 minutes until heated through. Remove from heat and mix in 1/2 cup of shredded cheddar cheese until melted.

Assemble the Burritos:

  • Warm the tortillas in the microwave for 15-20 seconds to make them more pliable.
  • Spoon the beef mixture evenly down the center of each tortilla. Top with extra cheese and any desired toppings like chopped tomatoes or lettuce.

Fold the Burritos:

  • Fold in the sides of the tortillas, then roll them tightly from the bottom up to create burritos.

Optional Baking Step:

  • Preheat the oven to 350°F (175°C). Place the burritos seam-side down in a baking dish. Sprinkle the tops with remaining cheese and bake for 10-15 minutes until the cheese is melted.

Serve and Enjoy:

  • Serve hot with your choice of guacamole, sour cream, or salsa on the side.
