- 8 ounces (225g) cream cheese, softened
- 1/2 cup (120g) sour cream
- 1/2 cup (120g) ranch dressing
- 1 cup (150g) finely chopped kosher dill pickles, divided
- 1 cup (100g) shredded mozzarella cheese
- 1 cup (100g) shredded cheddar cheese
- 1 (14.5-ounce/410g) can white beans (such as great northern or cannellini), drained and rinsed
- 1/4 teaspoon garlic powder
- 2 tablespoons fresh dill, minced (plus more for garnish)
- 2 tablespoons pickle brine
Preheat Oven: Preheat your oven to 375°F (190°C).
Prepare Cheese Mixture: In a large bowl, combine the softened cream cheese, sour cream, ranch dressing, and garlic powder. Mix until well blended.
Add Mix-ins: Stir in 3/4 cup of the chopped dill pickles, white beans, half of the mozzarella and cheddar cheeses, fresh dill, and pickle brine. Mix until all ingredients are evenly distributed.
Transfer to Baking Dish: Spoon the mixture into a 7x10-inch (or similar size) baking dish, spreading it evenly.
Top with Remaining Ingredients: Sprinkle the remaining mozzarella and cheddar cheeses over the top, followed by the remaining chopped dill pickles.
Bake: Place the baking dish in the preheated oven and bake for 21-23 minutes, until the dip is hot and bubbly.
Broil (Optional): For a golden-brown top, switch the oven to broil and cook for an additional 2-3 minutes, watching closely to prevent burning.
Garnish and Serve: Remove from the oven and garnish with additional fresh dill. Serve hot with your choice of dippers.
