Beef Stew with Turmeric Rice

For the Beef Stew:
- 1 lb Beef chuck, cubed
- 2 tbsp Olive oil
- 1 Onion, chopped
- 2 Carrots, sliced
- 2 Potatoes, cubed
- 3 Cloves garlic, minced
- 4 cups Beef broth
- 2 tbsp Tomato paste
- 1 tbsp Thyme
- Salt and pepper
For the Turmeric Rice:
- 1 cup Basmati rice
- 2 cups Water
- 1 tbsp Turmeric powder
- 1 tbsp Butter
- Salt to taste
Beef Stew:
To prepare the pasta, first, heat olive oil in a large pot over medium heat. Brown the beef cubes.
Add onion and garlic, sauté until soft.
Stir in carrots and potatoes.
Add the tomato paste, the beef broth, the thyme, the salt and the pepper.
Cook over low heat until the beef is cooked, about 2 hours.
Turmeric Rice:
Rinse rice under cold water.
In a pot, bring water to a boil. Add rice, turmeric, butter, and salt.
For fifteen minutes, or until the water is absorbed, simmer with a lid on over low heat.
Fluff with a fork before serving.
