Ingredients
  

For the Beef Stew:

  • 1 lb Beef chuck, cubed
  • 2 tbsp Olive oil
  • 1 Onion, chopped
  • 2 Carrots, sliced
  • 2 Potatoes, cubed
  • 3 Cloves garlic, minced
  • 4 cups Beef broth
  • 2 tbsp Tomato paste
  • 1 tbsp Thyme
  • Salt and pepper

For the Turmeric Rice:

  • 1 cup Basmati rice
  • 2 cups Water
  • 1 tbsp Turmeric powder
  • 1 tbsp Butter
  • Salt to taste

Instructions
 

Beef Stew:

  • To prepare the pasta, first, heat olive oil in a large pot over medium heat. Brown the beef cubes.
  • Add onion and garlic, sauté until soft.
  • Stir in carrots and potatoes.
  • Add the tomato paste, the beef broth, the thyme, the salt and the pepper.
  • Cook over low heat until the beef is cooked, about 2 hours.

Turmeric Rice:

  • Rinse rice under cold water.
  • In a pot, bring water to a boil. Add rice, turmeric, butter, and salt.
  • For fifteen minutes, or until the water is absorbed, simmer with a lid on over low heat.
  • Fluff with a fork before serving.
